Cheap and Easy Vegetarian Chilli

I absolutely love vegetarian and vegan recipes for how they make me feel and the extra effort that often goes into flavour and texture. An added bonus is the price difference if you shop smart... for example, the tin of beans used in this recipe cost 60/65p, a huuuge saving compared to what lean beef mince would have been! With it being veganuary, I challenge you to at least try cutting down your animal product consumption. I see lots of people starting small with things like 'meat free monday'!



I'm always put off by recipes which are expensive, have a tonne of ingredients and aren't adaptable to feed 1-2 people, so here's a super simple high protein meal idea for you to try. I made this to feed 2 so adjust as necessary.


Ingredients:

  • Tesco mixed taco beans

  • tesco hot chilli sauce (jar)

  • 1 pepper

  • 1 red onion

  • 1-2 red chilli to taste

  • fajita spice mix

  • uncle ben's microwave quinoa


Method:

1) Finely chop the chilli, half a red onion and half a pepper

2) cook at a medium heat in a frying pan with 1 cal spray until softened but not brown

3) drain the excess liquid from the bean mix and add to the pan

4) add some of the jar sauce (I used around 1/4 jar) and fajita seasoning to your taste

5) serve when hot or leave to heat later!


I served mine with quinoa, guacamole, salsa, cheese and wraps.

There was plenty of sauce, seasoning and half of the fresh vegetables left so I will likely cook those up with mince later in the week to have with sweet potatoes for a second easy, nutritious meal!
